  • 5 Eggs Room Temperature

It is best to let your eggs reach room temperature before using them. Eggs at room temperature are easier to bake with.

To speed up the process you can place the eggs in a bowl of warm water.

Carrots may not be as low in carbs compared to some leafy greens, but they still are ok for a low carb diet, when in moderation.

This recipe calls for 1 cup of shredded carrots which has then 9 grams of carbs, giving it less then 1g of carbs from carrots per slice.


  • 8 oz Cream Cheese room temperature
  • 1/2 cup Butter Softened
  • 1/4 cup Powdered Monkfruit
  • 4 tbsp Heavy Cream

Don’t over beat, it will flatten then deflate. Also add cream in 1 tbsp at a time.

Yes this cake can be frozen. I recommend wrapping up individual slices in plastic to protect it from freezer burn. Wrapping up slices individually also make it easy to grab at a later date one for a treat.

You can store this cake in an air tight container in the refrigerator for up to 5 days.

  1. Preheat oven to 350 degrees. Line two 8 inch cake pans with parchment paper and spray with cooking spray.
  2. In a medium bowl, beat the wet ingredients together until uniform.
  3. Mix the dry ingredients in a separate bowl until incorporated. Add the dry ingredients slowly into the wet mixture and mix until combined. Don’t over mix or your cake will be dense.
  4. Fold the carrots into the batter until just combined.
  5. Pour the batter evenly into the two pans. Bake for 30-35 minutes until a toothpick inserted into the center comes out clean.
  6. Let cake cool inside pan for 15 – 30 minutes and then invert onto cooling racks. While cake is cooling prepare the frosting.


  1. Cream the butter and cream cheese together until smooth. Add the sweetener and mix in until smooth. Add in the vanilla continuing to mix. Add in the heavy cream a little at a time until frosting is nice and fluffy.
  2. Let cake cool completely.
  3. Spread the frosting on the top of the bottom layer. Place top layer on top of it. Spread the rest of the frosting on the sides. Sprinkle with coconut if desired.
  4. Refrigerate finished cake for at least 1 hour and store leftovers in the fridge.
