Back in the 90s, hot pockets were one of the first frozen on the go foods to come out. They were little “wrapped up” pizzas you could put in the microwave and then eat on the go.

The problem with hot pockets is that they are terrible for you. They are full of refined sugar, carbs, preservatives, sodium, and many other food by-products that cause inflammation in the body. Plus if that wasn’t enough, they were high in calories with very little nutritional value.

Ingredients

  • 3/4 cup Mozzarella shredded
  • 1/3 cup almond flour
  • 2 eggs large
  • 2 tbsp butter unsalted
  • 3 slices bacon fried
  • 1 pinch salt optional

Instructions

  1. Melt the shredded mozzarella and add the almond flour.
  2. Stir until well-combined.
  3. Roll the dough out between two sheets of parchment paper.Scramble the eggs in butter and lay them with bacon slices along the center of the dough.
  4. Fold over and seal the dough. Add some holes on the dough surface using a fork. This helps release the steam while baking.
  5. Bake at 400°F for about 20 minutes or until it turns golden brown and firm to the touch.
  6. Remove from the oven and enjoy!
