Boneless, skinless, chicken breast: I’m sure you could use thighs also but chicken breast seems to be the best option. Granted, chicken thighs would add some extra fat to this keto casserole.

Monterey Jack And Sharp Cheddar Cheeses – the mixture of cheeses is what holds this casserole together. You can substitute out these cheeses for other ones. No matter which cheese you use, make sure the cheese is grated. You can buy pre-grated cheese, but remember they have extra stuff in them which will raise your carb count if the recipe.
Bacon – you can use regular bacon chopped up very finely or use pre chopped bacon pieces.
Spices – the Keto BBQ Sauce will add a lot of flavor but, you will want to add some extra spice. Garlic, pepper, salt, and 3/4 tsp parsley are the best spices to add.

Step by Step Instructions
Step 1:Cook the boneless chicken breasts in a slow cooker for either six hours on the low setting or three hours on high. If you prefer, you can cook it in the instant pot for an hour. I like to add garlic, pepper, and salt with a little chicken broth. But you can season it however you prefer.
Step 2:Preheat the oven to 350 degrees and prepare an 8×8 baking dish by greasing it. Then take the chicken out of the slow cooker or instant pot and chop it up. Try to cut it into large pieces.
Step 3: Place the chicken pieces in the bottom of the greased casserole dish and sprinkle garlic seasoning on top.
Step 4:Then, pour your choice of low carb BBQ sauce on top of it. I prefer my homemade recipe, but you can find sugar free bbq sauce options at the grocery store.
Step 5:Crumble the cooked bacon on top of the BBQ sauce. Then, cover it with the cheeses. Feel free to sub out different kinds of cheese such as Pepper Jack, mozzarella, white cheddar, etc.
Step 6:Bake the casserole in the 350-degree oven for 15 to 20 minutes, or until the cheese has completely melted. If you like to brown the cheese, place it on the top rack for two minutes.
Step 7:Take the casserole out of the oven and sprinkle parsley on top as a garnish.
