These Keto Almond Flour Pancakes are a must make for any person following Keto. They are fluffy, made in minutes, and are a satisfying low carb breakfast option.

In my house I am known as the pancake king. I take that title very serious. Every Sunday for years has been pancake Sunday, with each week bringing a diffrent flavor of pancake. But, once I went Keto, it was super hard for me to continue pancake Sunday.

I tried for a few months but every time I made them, I would fall victim and make a stack for myself. So, I just stopped making them altogether. That was, until I found these Keto Almond Flour Pancakes.

I have tried multiple versions of low carb pancakes and none of them were ever up to my standard of pancakes. But one day I stumbled across a this low carb pancake recipe. It wasn’t perfect and needed some work, but after a few tries, I got it to the level that I am proud of.

This Keto pancake recipe is so good, I have started back pancake Sunday and the entire family enjoys the low carb version just as much as any carbed filled pancake.

Can You Store These Keto Pancakes?

You can for sure save these pancakes for later. If you want to save these in the refrigerated, place them in an air tight container and then you can save them for up to 3 days.

If you need to store these low carb pancakes for longer then freezing them are your best option. To save them in the freezer, you need to first place Parchment Paper in between each pancake, then place them in a freezer bag. You can store these in the freezer for up to 1 month.

How To Make Keto Almond Flour Pancakes

 In a bowl, combine almond flour, sweetener, and baking powder. Next, mix almond milk, vanilla, and butter and stir.

Separate the eggs, then place egg yolks into the dry ingredients and stir until everything comes together.

Beat egg whites in a chilled bowl, with a pinch of salt until firm peaks form.

Slowly fold the egg whites into the batter. Make sure you stir gently until all egg whites are incorporated.

  • 2 large eggs
  • 1/3 cup almond milk
  • 2 teaspoons baking powder
  • 2 teaspoons powdered Erythritol
  • 1 pinch salt
  • 2 tablespoons butter melted and cooled
  • 1 teaspoons vanilla extract
