Let’s face it, potato salad is one of the main dishes everyone looks forward to at a family get-together. The potato salad can either make or break a family dinner. That’s why it sucks that we can’t have it while on a keto diet. Well, that is until now! Check out this delicious creamy keto potato salad recipe.

Ok so it’s obvious that this keto potato salad recipe doesn’t have potato’s due to its high carb count. But, using keto friendly cauliflower is the perfect replacement.

This low carb gluten free potato salad is made the exact same way regular potato salad is made. the only difference is the cauliflower in place of the potato’s.

How To Make Keto Potato Salad

Preheat your oven to 375° F and line 2 large baking sheets with parchment paper.

Put the cut up cauliflower on the baking sheets and covered in olive oil.

Season with salt and pepper to taste, mixing together to make sure the cauliflower is evenly coated with olive oil, salt, and pepper.

Cook the cauliflower in the oven for 30-35 minutes. Allow to cool down before moving to next step

Mit the mayo, mustard, chopped dill pickle and pickle juice, celery, green onion, and chopped hard boiled eggs in a large mixing bowl.

Add the cauliflower and mix everything together.

Top the keto potato salad with crumbled bacon and serve after refrigerating for 30 minutes.

How To Store Keto Potato Salad

If you place the potato salad in an air tight container you can save it for up to 3 days. This low carb potato salad taste just as good the next day is it did on the first day.

  • 1/4 tsp ground black pepper
  • 2/3 cup mayonnaise
  • 2 tsp dijon mustard
  • 1/4 cup dill pickle cut
  • 2 tbsp  dill pickle juice
  • 1 stalk celery
  • 1 stalk green onion
  • 4 hard boiled eggs chopped
  • 2 slices bacon cooked and crumbled
